Travel + Leisure says..."Hayman is one of the reef’s big, historic resorts, with 209 guest rooms, 350 employees, acres of marble flooring, four dining venues, and three bars. In 1936, the American novelist Zane Grey filmed "White Death" on the island, and in 1970 the resort was severely damaged by a cyclone. After the it reopened six months later, 650,000 trees and shrubs were introduced to the island. The once-before-I-die icon has been accepting paying guests since 1959, when the accommodations were basic cabins. Today, rooms facing the seven-times-Olympic-size swimming pool—so gigantic it loses 1,500 gallons of water in evaporation and runoff per day—have terraces that jut into the water, so you can jump right in from your bed. Hillside pavilions are spread over 30 acres of tropical bushland above the Coral Sea, and are designed to reflect Aussie style using local hardwoods and quarried stone. "The attention to detail is exceptional," and some pavilions have sundecks and private pools. The Pebble Beach restaurant serves casual Australian lunches, while the more formal Long Pavilion is all about seven-course meals that include dishes such as the organic chicken with autumn vegetables and the Tasmanian salmon with whiting and enoki.
